Creamy Cilantro Rice

Cooking the rice in milk adds great flavor and texture. 

Prep time: 15 minutes

Cook time: 25 minutes


2 tablespoons butter

3/4 cup chopped onion

1/2 cup fresh corn kernels

1 cup long-grain rice

1 cup milk

3/4 cup chicken or vegetable stock

1/4 cup salsa verde

1 teaspoon garlic salt or to taste

1 large poblano pepper, roasted, peeled and chopped (optional)

1/4 cup chopped fresh cilantro

Melt butter in a medium saucepan over medium heat. Add onion and corn and cook for 5 minutes to soften. Add remaining ingredients except cilantro and bring to a boil. Reduce heat and simmer, covered, for 20 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork and stir in cilantro. Makes 6 servings.
