Chili Spiced Mayocoba Beans

Similar to pinto beans but faster to cook and no presoaking required. 


1 lb. mayocoba beans

1 medium onion, chopped

4 cloves garlic, minced

4 dried chiles (arbol, chipotle or pasilla)

Water

Salt to taste

Place beans, onion, garlic and dried chiles in a slow cooker. Add water to cover all by 2 inches. Cover and cook on HIGH for 4 hours or until beans are very tender. Season to taste with salt.
