Zucchini Ribbon Salad

Prep time: 15 minutes


2 large zucchini

1/2 cup thinly slivered red onion

2 tablespoons extra virgin olive oil

2 tablespoons lemon juice

1 teaspoon dried Italian herb seasoning

1 teaspoon sugar

Sea salt and pepper to taste

3/4 cup shaved Parmesan cheese

Using a vegetable peeler, shave the zucchini into long ribbons into a large bowl, stopping when you get to the seedy center; discard seeds. Add onion to the bowl. Whisk together oil, lemon juice, sugar, salt and pepper in a small bowl. Drizzle over the zucchini and toss lightly to coat. Top with cheese. Makes 6 servings.
