Blackberry Lemon and Balsamic Vinaigrette

Prep time: 5 minutes

1/2 cup extra virgin olive oil

3 tablespoons lemon juice

3 tablespoons balsamic vinegar

2 teaspoons Dijon mustard

1 tablespoon lemon curd

1/4 teaspoon sea salt

8 large fresh blackberries

1 clove garlic

Puree all ingredients in a small blender or food processor until smooth. 

Great served over greens, or add cubes of smoked turkey, bite-size pieces of Brie cheese, sliced red onion and toasted walnuts to make it a main dish salad.
