Walnut Chorizo Mini Pizzas

This vegetarian chorizo is a total game changer! So tasty and so good for you as it starts with heart healthy walnuts. Use it on these mini pizzas or serve in tortillas or over eggs. However you use it, it will be your new favorite recipe!

Walnut Chorizo:

2 1/2 cups California walnuts

1 (15-oz.) can black beans, rinsed and drained

3 tablespoons vegetable or olive oil, plus additional for skillet

1 tablespoon white vinegar

1 tablespoon smoked paprika

1 tablespoon ancho chili powder

1 teaspoons dried oregano

1 teaspoon kosher or sea salt

1 teaspoon chipotle chili powder

1 teaspoon ground cumin

1 teaspoon ground coriander

Pizzas:

Stonefire Naan Mini Dippers

Salsa

Shredded pepper-Jack or Mexican blend cheese

Optional toppers:

Mashed avocado or guacamole, fresh cilantro, sour cream and additional salsa  

 

Preheat oven to 400°F and line a large baking sheet with parchment paper or foil. Place all chorizo ingredients in a food processor and pulse until mixture is chopped, but not mushy, scraping down the sides often. Heat 1 tablespoon oil in a very large skillet over medium heat. Add walnut mixture and cook for 8 to 10 minutes, or until lightly browned, stirring frequently. Place Stonefire Naan Mini Dippers on prepared baking sheet. Spoon a little salsa on each. Top with a little cheese and a sprinkle of walnut chorizo. Bake for 10 minutes or until cheese is melted. Serve with any desired toppings.

 

Recipe tip:

The Stonefire Mini Dippers are great to make these 2 bite appetizers or snacks. But any Stonefire Naan products will work just as well.
