Peachy Marinated Chicken with Fresh Peach Salsa

Prep time: 20 minutes

Marinate time: several hours or overnight

Cook time: about 10 minutes

 

1 cup packed fresh cilantro leaves and stems

3/4 cup minced onion

3/4 cup lime or lemon juice

1/4 cup minced jalapeno pepper

2 tablespoons olive oil

2 1/2 teaspoons sea salt

4 cloves garlic, minced

2 individual cups Chobani Zero Sugar Peach Yogurt

8 small boneless skinless chicken breasts or thighs

Peach Salsa:

2 cups diced ripe fresh peaches

1/4 cup minced red onion

2 tablespoons finely chopped cilantro

1 tablespoon lime juice

2 teaspoons minced jalapeno pepper

 

Place cilantro, onion, juice, jalapeno, olive oil, salt, garlic and yogurt in a large zipper seal bag. Squeeze bag to mix, then add chicken. Squeeze again to coat with marinade. Seal and refrigerate for several hours or overnight, the longer the better. While chicken is marinating, stir together all salsa ingredients together in a medium bowl. Cook chicken on a well-oiled grill over medium-high heat for 5 minutes on each side or cooked through. Remove to a large piece of foil and bring in the sides to enclose slightly; let stand for 5 minutes. Serve chicken and any accumulated juices over Cilantro Rice with Peach Salsa.
