Jalapeno Hummus Sliders

Prep time: 20 minutes  

Chill time: at least 30 minutes

Cook time: 10 minutes

 

1 (15.5-oz.)can Dark Red Kidney Beans, rinsed and drained

1/2 container (about 1/3 cup) Fresh Cravings Jalapeno Cilantro Hummus

1/2 cup cooked brown rice

1/3 cup finely crushed tortilla chips

3 tablespoons finely chopped smoked almonds

3 tablespoons minced red onion

1 1/2 teaspoons Mexican blend seasoning

1/2 teaspoon garlic salt

1 egg

Olive oil or olive oil cooking spray

Small slider rolls, additional Fresh Cravings Hummus and Fresh Cravings

     Salsa

 

Place beans in a large bowl and mash well. Add hummus, rice, tortilla chips, almonds, onion, seasonings and egg. Stir until well mixed. It’s best to refrigerate for at least 30 minutes to let mixture firm up. Shape into 10 equal patties and coat with oil or cooking spray. Cook in a large nonstick skillet over medium-low heat for about 5 minutes on each side or until lightly browned, tenting with foil. Serve on toasted buns with hummus and salsa.
