Cheese, Walnut and Chive Scones

1 1/3 cups flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt

6 tablespoons cold butter, cut into 1/2-inch pieces

1/2 cup shredded English sharp Cheddar or other English cheese*

1/2 cup whipping cream

2 tablespoons chopped walnuts

Preheat oven to 425°F and line a baking sheet with parchment paper. In a large bowl, stir together flour, baking powder and salt. Cut in butter with a pastry blender until it’s in small pieces. Stir in cheese, cream and walnuts. Gather dough into a ball then knead several times on a lightly floured board. Roll 1/2-inch thick and cut with a 2-inch cutter. Place on prepared baking sheet and bake for 15 minutes or until lightly browned. Makes 16 small scones.

*Try a flavored cheese such as one flavored with onions and chives,  whole grain mustard or a smoked cheese.
