Caramelized Onion and Apple Flatbread

The prosciutto adds a fantastic salty flavor to these small pizzas, but you can skip it to make it vegetarian. 


Prep time: 15 minutes

Cook time: 40 minutes total

2 tablespoons butter

1 very large onion, peeled, halved and thinly sliced

2 Modi Apples, peeled, cored and sliced

1 ball prepared pizza dough, divided

 12 oz. fresh mozzarella cheese, torn into pieces

4 slices prosciutto, torn into pieces

1/4 cup grated fresh Parmesan cheese

 Fresh thyme leaves


Heat oil in a large skillet.  Add onions and cook over medium low heat, stirring frequently, for 20 minutes, or until onions are very soft and golden brown.  Add apples and cook for 15 minutes more, stirring frequently.  Preheat oven to 450°F.  Place pizza crusts on a large baking sheet and top with equal amounts of Mozzarella cheese, caramelized onions, pears, prosciutto and Parmesan cheese.  Bake for about 10 minutes or until cheese is melted and crust is golden brown.  Top with chopped thyme and let cool slightly.  Cut into wedges and serve.  Makes 4 main dish servings or 16 appetizer servings.
